Admittedly, some of the ingredients in this book are hard to find. (Special varieties of soy sauce are the least of your worries.) But they're extremely faithful to traditional Japanese cooking, and amazingly delicious. If you're within driving distance of an Asian grocery, you will have no problems. I can't recommend the recipes in this book enough.
