Well, at least it does hold up to its title w/r/t the "in twenty minutes" part. I rarely return to these recipes unless I need to come up with a quick meal, but still there are better cookbooks for that. Check out one of the Weight Watchers vegetarian cookbooks for instance. One of my main beefs (slight pun intended) with this book is that not all the recipes are vegetarian. Hearty bean soup calls for chicken broth. Yes, chicken broth does come from chickens. It is meat in liquid form, thus not meatless. Then there are the recipes with disgusting amounts of unhealthy ingredients, like the black bean burritos, which calls for 3 oz. of cream cheese. Granted, that is mild compared to cheese cake, but there are so many healthier alternatives to cream cheese you could put in a black bean burrito. Just sayin.
