How many ways are there to make shortbread? At least thirty, according to Jann Johnson. In addition to the classic Scottish treat, she offers nineteen sweet variations and ten more savory ones. Some of her sweet combinations are truly novel, e.g. lavender-rose shortbread and raisin-Drambuie shortbread. The savory options are even more surprising, e.g. corn-and-pumpkin-seed shortbread and madras-curry-and-coconut shortbread. The introductory chapters of equipment and techniques do not assume that the reader has any experience which, for the inexperienced, is a very good thing.
