The Northwoods Table: Natural Cuisine Featuring Native Foods

Rate this book
The northwoods spreads from coast to coast, featuring indigenous ingredients from mussels to mushrooms, venison to salmon. Encouraging you to be creative in your culinary endeavors, The Northwoods Table is a recipe book like no other. The recipes consist of many foods found in the northern tier of the United States and southern Canada, some wild and some cultivated, which when combined with classic cooking techniques and exotic or imported ingredients, give birth to what Sinkus calls Northwoods Cuisine. The ingredients and combinations should enable any cook to create the ambiance of a log cabin with a fire crackling in a pot-bellied stove.

Walleye and crayfish mousseline, venison spring rolls, wild game sauerbraten... so much to love in a cold place up north. I can't wait to work on some wild rice cakes. I would have appreciated a few more recipes and a bit more on technique but this is a solid offering in an under-researched area.
