American-born Robert Carrier, Britain's leading food writer, takes the first in-depth look at the cuisine of Morocco and the culture that has inspired it in a glorious volume featuring 150 authentic recipes. More than 100 full-color photographs.
Robert Carrier OBE (born Robert Carrier McMahon – died in France) was an American chef, restaurateur and cookery writer, whose success came in England, where he was based from 1953 to 1984, and then from 1994 until his death.
I have a bookshelf full of cookbooks on Moroccan cuisine, and this one is the best. It features authentic recipes and excellent background information, written by a superb chef who actually lived in Morocco and truly understood the cuisine. While there are other good books, they often contain personally adapted recipes or dishes that were unknown in Morocco until recently (like baklava, included in Fatima Hal's well-known book 'le grand livre de la cuisine marocaine'). That's why this book is my favorite.
