Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

This was an excellent book,packed with a lot of info on what to do in Seattle,I would highly recommend this book to any one who is planning to visit Seattle. I look forward to reading more of this author's work.

I only read this because I'll be spending a few days in Seattle next month. This was my first travel guide that I had read, so I had nothing to compare it with. Although the book was written by various contributors, the topics were all put together nicely. The guide could use a map though and some helpful tips for tourists or first-time visitors (e.g. best month to visit, areas to avoid, etc).

More of a reference than a guide, really. The authors list their favorite places across a few categories like Dining, Fast Food, Outdoors, etc. Useful if you are searching for something particular.
