An extremely involved and detailed book that I cannot give a full five stars to merely for the fact that to understand the whole of this book you need a fair knowledge of chemistry to at least A level or maybe even undergraduate level.

While most of the information went over my head there is plenty that can be learnt, the chapters on wort boiling, fermentation, clearing and beer stabilisation are very good.
