Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
This book was already outdated when it was published in 2008 - for example, the Hôtel Buffet de la Gare, in Antasibe, had already been closed for a few years (locals say it was closed over 10 years ago, so before 2004). And as stated in other reviews of Lonely Planet books, these should be more for the general traveller, and no so narrowly focussed on what low-budget back-packers are looking for. Nevertheless, reading this travel guide accompanied me well during my Madagascar escapade.
