This cookbook is an excellent resource for mothers who find themselves with limited time, but still want to prepare delicious and nutritious meals for their families. The recipes in this book are kid friendly, but will also appeal to adults, thus eliminating the need to prepare separate dishes for children and adults. The directions are easy to follow and all the ingredients are readily available at local supermarkets. Best of all, the foods are delicious and can be on the table in about half an hour or less. Many of the recipes have a Mediterranean flair, but are simple enough to prepare that even the beginning cook will find it a cinch to follow this guide.

March 29, 2010I love this cookbook because it's not overwhelming! The recipes are easy and quick which is essential for me as a working mother. I've made the minestrone soup many times and my 3 1/2 year old son loves it. I've made the beef and turkey meatballs with marinara sauce also many times and it always comes out delicious. I used to just guess at making sauce and meatballs but with these recipes right in front of me, I don't forget ingredients or measurements so the meals are consistently great. I simply don't have the time for Julia Child's recipes but I DO have the time for New American Cuisine for Today's Family recipes.

This is my first published Mediterranean cookbook. I'm very proud of it and would like to share some of my favorite recipes with those who enjoy quick and healthy Mediterranean dishes.
