The Mediterranean Diet Cookbook for Beginners: A Balanced and Complete Diet, with a 28-Day Smart Meal Plan, and Easy and Quick Recipes for More than 365 Days, for Clean and Healthy Eating by María Rodríguez
Starts with diet meal plan for 28 days. TOC where recipes are broken up into meals.
Intro discusses the Mediterranean diet along with medium size color photos, essential things like foods to avoid.
Each recipe starts with a title summary of the dish.
To right hand side are servings, and some nutritional information: calories, protein, fats, fiber, carbs.
To left of medium size color photo are prepare and cook times.
To left under that is a list of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
Directions are under photo. My favorite would be baked fish. Zucchini bread would be my next, i make muffins out of the recipe and have when we take hikes.
Carrot cake muffins would be popular also and pumpkin and carrot muffins.
A KEEPER and I would be substituting with low fat, low sugar and low sodium products, nothing canned.

Could Have Been Better

The recipes are interesting enough, and well-presented and illustrated. However, the Table of Contents is set up so that you can't go directly to a specific recipe. You must flip through each page of the entire book to find the recipe you want. With hundreds of recipes given, that's EXTREMELY inconvenient and time-consuming!
