Pancreatitis, internal inflammation, and being in pain sucks but there is good news, you can recover. After many frustrating years of being poked and prodded and 100's of tests done showing insignificant changes while I felt like the walking dead, I decided to write a book to help decipher some of the confusion around the confusing conditions related to pancreatic and endocrine disease. Selfcare and mindful eating might be new to you and who knew that all the food we loved was literally making us crazy and causing so much distress?
I am a former RN from Pennsylvania, who was married for 28 years to a surgeon, in the field of urology. I am a no nonsense Mom of 4 (3boys, 1 girl) and grandmother. Also a Marine/veteran Mom, and sober 12yrs. I was more a carboholic than alcoholic. I've seen lots of really extreme medical scenarios during my brief 8 yr nursing career and witnessed many family members, relatives, and friends suffer while I was failing. I cared for both of my parents with lung, and ovarian cancers, as burnout and black mold got a hold of me. 50 is the new 25, 60 the new 30! Every day is a new day to challenge yourself to disciplined wellness and mindful eating. Functional Nutrition Counseling is my new gig and since I love to cook, I hope to create a space virtually or in person, for us to do some carb smart cooking together.
