Yum. I love pickles, especially the ones my mom and m-i-l used to make. And I love the fresh sauerkraut my cousin makes, but never tried any of these culinary delights myself. Now I can. There’s an extensive introduction with the history and benefits of fermenting/pickling. I also never understood the difference between fermenting and pickling and now I do. The author lists the essentials such as the right salt to use (did you know there’s a difference between regular salt and “pickling” salt?), herbs and spices you can use and how to be safe when pickling/fermenting. There are lots of recipes not just for your regular old ordinary pickles, but fermented foods like sauerkraut and kimchi, chutneys, relish, and more.

Recommendation: highly recommended.

Good introductory guide on getting started with pickling fruits and veggies. It covers implements, basic brines, adds more challenging recipes and then has recipes for uses of what you pickled.
