To bake a range of delicious confections, you don’t need to use fancy gadgets, obscure processes, or hard-to-find ingredients. You will need some basics to get the job done properly, however.
Essential Equipment
It can be tempting to stock your kitchen with every single pan and appliance available—trust me, I know! But, as I’ve learned over the years, you need only a few essential items to tackle most baking recipes.
Cookware and Bakeware
Must Have
Baking Flat metal baking sheets are available with a rim or without. I prefer ones with a rim because they can be used to bake cookies, bars, and even cakes. Invest in two so you can rotate batches in and out of the oven. Baking Baking pans come in a variety of sizes and shapes—most have sides about 2 inches deep. My go-to baking pans are a 9-by-13-inch rectangular pan, an 8-by-8-inch square pan, 8½-by-4½-inch and 9-by-5-inch loaf pans, two 9-inch round cake pans, and a 12-cup cupcake/muffin pan. I recommend aluminum baking pans for their even heating and cooling properties.
Pie I recommend a 9-inch glass pie dish.
Nice To Have
Bundt cake A Bundt pan is a round metal pan with a hole in the middle and uniform ridges up the side. Tart This 9- or 10-inch round pan has fluted edges and a removable bottom, making it ideal for baking beautiful tarts.
Tools and Utensils
Must Have
Measuring Invest in a set of dry measuring cups, a glass liquid measuring cup, and a set of measuring spoons. Choose metal and glass, as plastic can retain odors and residue.
Mixing A set of mixing bowls (again, metal is best), a silicone spatula, and a wire whisk are essential.
Cooling Baked goods continue to bake once you’ve removed them from the oven. Proper cooling on a wire rack helps ensure that they don’t end up overbaked.
Rolling A wooden rolling pin is essential for pie dough, certain types of cookies, and breads. My favorite is a French rolling pin made of solid wood that is tapered at the ends.
Parchment paper or silicone baking Parchment paper or a reusable silicone baking mat makes cleanup a breeze and keeps cookies from spreading too much.
Appliances
Must Have
Handheld electric mixers with beaters are available in a range of price points and make fast work of creaming butter and sugar for cookies, mixing cake batters, and whipping egg whites.
Nice To Have
Food This makes quick work of assembling pie dough, chopping nuts, and shredding vegetables (like carrots for a carrot cake). Stand If you have space in your kitchen and your budget, a stand mixer is a great investment. Thanks to its large capacity and heavy-duty motor, making cakes and cookie dough, whipping egg whites, and kneading bread dough become fast and easy tasks.
