Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

I read this many times as a child. Of course, none of the stories are really scary. They'd be more accurately described as "mildly creepy" at best. There is no indication of who compiled the stories, or who did the illustrations (the copyright page only has the ISBN and publisher details).

Webways by George Forrest This stood out as fun and different - the deus ex machina rescue at the end ruined it somewhat.
