I have always considered the bun the weakest part of a hamburger. Usually, I end up tossing the top or getting my burgers lettuce wrapped to avoid the mushy tasteless bun that inhibits, rather than enhances, my burger experience. That is why I was so excited about this cookbook! Finally a book that recognizes the bun is an integral part of the burger experience! The Blueberry Salmon Burger IS amazing! (actual recipe from the book) But it wouldn't be as good on a regular ol' store bought bun as it is on the Lemon Poppy Seed Bun (actual recipe from the book). Though I did replace the cream cheese with a goat cheese (lactose intolerant), I do not feel the burger lacked for the change. A few words of caution: you will have to work with yeast and your hands. However, don't be scared! The recipes make it easy for you. You don't need fancy pans and since you are making small quantities, the process is a great introduction into making bread on a larger scale!
