McCormick (Emory University) collects work on recent advances in the study of nutrition. The critical role of the melanocortin systems in controlling energy balance is considered, and work on antioxidant and anti-inflammatory effects of flavonoids on atherosclerosis is summarized. Research in extracellular thiols and the oxidation/reduction of thiols and disulfides is reviewed, and regulation of cationic amino acid transport is discussed. Three chapters deal with zinc, looking at its relationship to infectious diseases and in the programming of the immune system.
