This has some very solid recipes without using the fake “ meat@ you get at the store. It is a true WFPB. I drink smoothie most mornings and theirs don’t even use plant milk from the store but either whole nuts and water or oats. I am excited to try more of their recipes. This guy is also not a newbie at this but 15 years of eating this way and WITH KIDS!

Wonderful recipes full of flavor! Shows us we can make and eat delicious food without using animals. So excited to add this to my vegan cookbook collection!

The Healthy Vegan Cookbook
Step one, stop eating meat and dairy. Step two, stop eating processed food. The result? Feel better and eat better tasting food. This is how the author, Colin McCullough, introduces the reader to his system of getting started with eating a plant-based diet. In his debut cookbook, The Healthy Vegan Cookbook, he stresses that we should always eat food that tastes good and not suffer through our meals. “Don’t give up taste to eat healthy meal” could be his mantra. Ditching processed foods and eating homemade whole-foods will not sacrifice taste he tells the reader. His recipes that follow prove it.
“This is not just a collection of great recipes but a system to make preparing whole-food, unprocessed meals faster and more convenient,” he tells us. Colin recommends the right kitchen equipment and shares lots of tips to prepare food ahead of time, so you always have the healthy ingredients you need on hand. Many recipes share similar basic ingredients so it makes it easy to adapt recipes to meet your tastes. He suggests taking small steps to a plant-based diet, by trying to eat just one plant-based meal a week, and then just add in more as you go along. He makes a daunting task seem doable. He wants his readers to experience a faster journey than he did (his took 21 years).
Colin explains that he is not a nutritionist, but in sharing his dietary journey with readers, his experience more than makes up for not having a PhD or any formal culinary training. The desire to eat healthy food that tastes good inspired his life-long learning process to educate himself and in turn teach others. Colin host cooking classes that are extremely popular in libraries and community programs. People often take notes during his classes, as he offers so much new information.
The Healthy Vegan Cookbook offers recipes for sauces, smoothies (“that taste like dessert”), soups, bowl meals, salads, fillings for sandwiches, veggie burgers and desserts too! Each chapter has mini-lessons specific to its recipes. Many recipes have their own introduction and preparation tips. Many have catchy names like “No Beef, No Bull” Stew, “Blasphemous Curry Powder”, and “Crabby Sea Cakes”. The last chapter, “Odds and Ends”, offers readers a final taste of Colin’s creativity and wit as he refers to this section as a place to put “misfit recipes.” His humorous antidotes and honesty makes this cookbook an enjoyable read. You will laugh and feel like you have shared the same dinner table with him. And you won’t feel like you are cooking solo, trying to figure it all out for yourself. He has done that for you.
