Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

The quotes and artwork in this book are incredible! I turn to it regularly for inspiration. It teaches about the power of charity and goodness. It talks about how we need to be toward others and the great blessings that come from being charitable and Christlike. What a different world this would be if every person in it followed the inspired principles taught in this book. It contains great treasures that show us all a better and higher way, but it is not just instructional; when I read it, I feel the rightness of kindness, love, and gentleness. It makes me want to be loving, kind, forgiving, gentle, and generous. I also own the other three quote books in this series by Walnut Springs Press. They are all wonderful.
This little book is written by various different authors that contain inspirational quotes for women on the power of gentleness. Don't underestimate gentleness.
