Foodborne Listeriosis

Rate this book
These proceedings nicely produced on slick stock, but without an index comprise contributions to the Comprehensive Conference on Listeriosis monocytogenes held October 1988, in Sonoma Valley, Calif. The subject bacterium is ubiquitous and extremely hardy, demonstrating remarkable resistance to sanitizers in food processing facilities. Meningitis is the most commonly recognized form of human listerial infection; neonates, pregnant women, the elderly, and individuals receiving immunosuppressive therapy are at particular risk. These 30 presentations review all aspects of the bacterium, its physiology and metabolism, detection, clinical manifestations in animals and people, and control. Modern food production methods intense, dependent on storage, with a trend toward convenience foods which may be improperly stored or prepared have increased the occurrence of listeriosis; effective methods of detection and prevention must be found.
