A very detailed academic history of the meatpacking industry in the USA. I read it for an article I was writing about the life and work of Addie Wyatt, one od the leaders of the united Packinghouse Workers of America(UPWA) and later the United Food and Commercial Workers(UFCW). The book was especially useful for understanding the changing economics of the meat industry and ts account of the UPWA, a radical militant union in its heyday.
