Sumo press rarely presents dishes that are authentic

I have been to a number of countries covered by Sump Press. Their recipes use shortcuts or ingredients you would never find in country. If you want simple facsimiles of a cuisine, feel free to have at it.
If you want authentic recipes, find country specific blogs that are well regarded by sources such as Gourmet, the New York Times or the leading newspaper from the country. Or you can buy highly rated and provide real cookbooks by real authors
