I’ve had days where I loved to cook, days where cooking was a necessary evil, and days where I became so absorbed in a writing or sewing project that I lost track of time, needing a meal in a hurry, or when the working day had been long. On those days, I needed ingredients I could pull off my shelves, freezer, or refrigerator, and which didn’t require a lot of preparation time.
The I Hate to Cook Book title was already taken, so this cookbook became The Super Simple Easy Basic Cookbook, instead.

This cookbook is for those who love to cook, those who don’t, for beginners, for experienced cooks looking for something different, and especially for those who like good foods.

Most recipes come with a story that tells how the recipe became a favorite or why it was created.

Super foods, simple steps, easy to fix, and basic ingredients. Some of my all-time favorite recipes: Two-Minute Fudge, Chocolate Cherry Cake, Pralines, Butterbeer, Old-Fashioned Pan Rolls, Guacamole, Red Pepper Cream Cheese Seafood Dip, Crustless Quiche, Eggnog, Lobster/Crab/Fish Bisque, Black Forest Mug Cake, No Grain Cheese Crust Pizza, and homemade mixes.

Because I was allergic to onions for a couple decades, with onion in a lot of foods located in the middle aisles, I had to come up with foods that I could eat and that didn’t sacrifice taste for my family. The key to using this cookbook is to take my recipes and make adjustments suited for your use. Think of this cookbook as a starter or base to build upon. Have fun with it!

An award-winning writer in multiple genres, she has published books, magazine articles, short stories, poetry, served both as a newspaper and magazine columnist, had two short plays produced in New York, and has optioned a screenplay. She has served as a reviewer for various academic journals, as a contest judge for multiple writing organizations—both young adult and adult, and in fiction and nonfiction.

She writes full time and travels with a crowd: those on the other side & characters who demand she write their story next.

When not writing, she enjoys movies, puzzles, and lunching with friends.
