Anyone who watches the Cooking Channel or the Food Network knows the importance of potatoes. Whether it is a side to a meal, part of a soup, an addition to making bread, or completing a casserole, this cookbook refers to it as a "meal in a peel".
Initially, the potato is both fat-free and nutritious. It is what the cook does with it that adds the calories and you will learn plenty when you peruse these recipes.
Some are common but others stretch the imagination. Where you take these ideas is up to you. Potato Chip Apple Crisp, Red Flannel Hash, One Dish Deluxe, Fried Potato Logs and Fish and Mushroom Ragout were not known to me. I have made Shepherd's pie using ground beef but not cubed cooked roast beef and gravy so I am going to try something new this week.
At 160 pages, the book contains quite a few recipes. This was published in the early 1980's so beware that the recipes use various fats without worry. If you are able to buy this out-of-print amendment to the kitchen on the cheap, it covers enough information that everyone is bound to learn something new.
