素食發酵隨手可做,葷食發酵風味變化無窮。運用手邊現有資源,當地當季盛產什麼就做什麼,最簡單也最能體現發酵的原初精神!
奶類發酵:克菲爾
乳糖不耐症者,除了優格還可以喝什麼?在裝有乳汁的玻璃罐中加入克菲爾顆粒,每1公升乳汁加入1大匙,密封玻璃罐後,置於屋內陰涼處進行發酵,並且定期搖晃或攪拌。當你看到液體變得濃稠,就代表克菲爾完成了!
魚類發酵:醃漬鮭魚
斯堪地那維亞鼎鼎大名的特產,在家廚房也能出現。只要用鹽、糖、蒔蘿以及其他香料將魚裹覆起來,在冰箱裡醃製數日即可。
肉類發酵:鹽醃牛肉
肉太多吃不完,想變化味道?先製作鹵水(10%的鹽和5%的糖),浸入塊狀生牛肉,放入冰箱10~14天,如此柔軟的鹽醃牛肉便完成了!
酒類發酵:蘋果酒與梨子酒
如果水果實在酸澀到不行,就拿來釀酒吧!新鮮現榨的果汁裡面就有酵母,裝入寬口容器之後很快就會發酵起泡,不斷攪拌可加速發酵作用,之後換到細口瓶裡就完成啦。
飲料發酵:水果氣泡飲
比起可樂,小孩更愛你的自製發酵氣泡飲!以覆盆子氣泡水為例,在3公升的水中溶解250毫升的蜂蜜,再加入1公升的新鮮覆盆子。室溫下發酵3天後移至冰箱冷藏,即能完成美味可口的飲料!
