I love that this book has a variety of recipes that are great for a novice (like me). The variety is helpful when you purchase baby spinach, for example, and don't use it all for one recipe; there are several other recipes that the rest of the spinach, kale, garlic, and onions can be used for. (I switch between this one and Souping, by Velazquez). Most of the recipes rely on the same basic skills: chop veggies/fruit/etc.; boil/simmer; blend; and serve. I also like that the book is mostly recipes; many souping books spend more pages on nutrition and personal stories than recipes. Drawbacks...very few helpful insights about the process, ingredient options, storage, or service for individual recipes. NO PHOTOS...yeah, I know that most pureed soups or vegetable soups look the same, but I like photos.
