Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

2+ years, 26 books. I am very proud of this accomplishment. It has opened up whole worlds of reading to me. I can now say I hate James Joyce, Austen isn't in the same league as Brontë, and neither holds a candle to George Eliot (Mary Anne Evans). That Steinbeck is still awesome, standing tall in the halls of the giants of literature. Salman Rushdie was better than expected, love Willa Cather, and Yeats is who would be born if Eeyore and Owl had a love-child. I could keep blathering but the point is this, there were some spectacular reads, some real clunkers, and the sum total of this endeavor was overwhelmingly positive. I really can't wait to go back to many of these authors other books and be transported again.
