This is a very complete introduction to Windows Server 2012, with hands-on exercises. After reading this continue with the 70-410 Exam Ref and you'll be all set.

This is a good intro guide to WS 2012 and powershell 3.0. Most topics aren't described in details, but this book gives strong basic knowledge.
