The food was quickly named Tex-Mex because of the changes as Mexican food made its way north across the border. Basic techniques, ingredients, sauces and fillings take the mystery out of Tex-Mex and make simple tacos, chili suppers, covered dish suppers or elegant and spicy brunches understandable, easy and simply delicious.
