This is a beautiful full-color book written by probably the best authorities on juicing: Jay and Linda Kordich (Jay was also known as the Juiceman). It came as part of a Live Foods Live Lives Bodies box set, but it is also available by itself. The theme of the book is in the title: Live foods, live bodies. Living foods (like raw juice, fruit and salads) promote good health and long life. He recommends a mostly vegan diet of 75% raw live foods and 25% cooked foods. He outlines a 3-month transition plan to ease into this way of eating. There's also a 3-day cleanse of juice and herbal tea fasting.

The most important information was in chapter 4 about enzymes-- this was a missing piece in my vegan diet, where I usually gravitated towards too many cooked foods and not enough raw ones. Raw fruits and vegetables come packaged with the very enzymes you need to digest them, so they're less of a digestive drain on the body (the pancreas has to try to make enzymes, otherwise, to digest the food, which gets more difficult as we age). The enzymes in the live foods (such as in juice) will help you better digest the cooked ones (most enzymes are destroyed when heated above 119 F). He offers tips for better digestion, too (one is to soak your beans, grains, nuts and seeds overnight, and then rinse them well. This releases an enzyme inhibitor and thus makes these foods easier to digest).

Besides juice recipes, there are recipes for salads, smoothies, dressings, and soups. There is also a recipe for a raw Living Hummus and other dips and spreads. There is also a Living Essene Bread recipe, baked in a food dehydrator so as to retain enzymes. There are a few cooked recipes as well. They show you what a living kitchen looks like-- theirs is beautifully organized. They say "learn to love your kitchen by creating a sacred space."

These are their Tips for Vitality:

1. Try to eat a rainbow of different colors from fruits and vegetables daily.
2. Try to eat high-water content foods (fruits, greens, vegetables) daily.
3. Try to eat at least up to one pound of salad per day.
4. Try to juice at least 24 ozs of vegetable daily.
5. Try to exercise 40 minutes per day, especially outdoors.
6. Get sun 20 minutes per day between 10-11 AM or 2-3 PM.
7. Try to pray every day for grace, mercy, peace, forgiveness, understanding and how to lead a virtuous life.
8. Try to drink at least 6-8 ounces glasses of steam-distilled water daily (not including the juice).
9. When you eat beans or grains, soak them for 24 hours beforehand.
10. Give time to a charity, or help an older neighbor or grandchild weekly.

This book is highly recommended for anyone looking to get into juicing or incorporating more raw foods into their diet. If I had to pick one book on juicing, this would be it.
