All the recipes look yummy, with the exception of the ones using tofu. I'm not a tofu fan at all. There are a few photos but I wish there were more. Everything is pretty simple to make, although some have whole tomatoes that have to be peeled and chopped. Chopping is no problem, but the peeling can be. That said, I love fresh tomatoes and I think they make the food taste so much better, so to me it's worth the extra time and work. I've thought a few times about eating vegetarian, but it seemed so daunting, this cookbook makes it easy to do.
I love vegetables and this book gives me the opportunity to eat them a variety of ways. I would recommend this book to all cookbook lovers and to anyone wanting to eat healthier and eat more veggies.
