In her first three cookbooks, she developed low-carb gluten-free recipes, a term long considered an oxymoron until the publication of her first book, “Muffins to Slim By.” In her newest collection, Elless takes a giant step away from special-diet recipes to introduce yet another first-of-its-kind, “The Pressure Cooker Yeast and Quick Bread Cookbook,” an illustrated how-to of classic favorites.
With no formal training, Elless spent decades teaching herself culinary techniques many considered impossible to achieve, discovering by trial and error the methods that do not work, and why, and the joy of cooking when they do. “Instant Pots have opened new doors to endless creative possibilities. This is absolutely the best time to be a cook!”
Over a lifetime of artistic endeavors, from fine art and cartooning (the “Donna Quixote” series in the National Museum of Women in the Arts magazine) to free-lance and humor writing in countless venues, Elless has used variations of her name, Marjorie L. Smith. Her cookbook pen name, Em Elless, is the sound of her initials, MLS, which she tried using but was repeatedly mistaken for the Multiple Listing Service. She is aided in the kitchen by her loyal dog, Gaby, who generously donates her time testing samples.

Great but would be better with fat grams
Add grams of fat and then excellent for keto eating.
