If I could choose one anatomy book for children it would be this one.
This book is the perfect starting point for understanding the human body. It is comprehensive so would probably suit an older child, without being too complicated for a younger child. Even when my son wasn't yet very advanced in terms of holding a conversation he still found this book engaging.
The illustrations are very detailed and clear and I really like that the body featured is that of a toddler so that children understand that it's themselves that are being described.

OMG, this book is excellent. I felt the need to teach my three year old about correct anatomy since there was some confusion and curiosity about the difference between boys' and girls' bodies. This book cleared all that up, taught her about all the different parts and functions, and gave me some vocabulary I wasn't aware of. An excellent book that has a budding doctor learning early.
