Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

I learned how to read Spanish as a child by reading this book. There are classical stories like Cinderella on here but there are also some classical Cuban stories that are very original and the rhymes stick to you. Although everything rhymes, it makes sense. I still have this amazing book and I wouldn't let go of it for the world. ✨✨✨✨✨

Realmente un terosro, this is my favorite childhood book. My parents were so tired of reading the same stories to me over and over again that I had to read it myself and thus my Spanish improved as a child and I excelled in Spanish Class. I'm able to read in Spanish at a faster velocity than I would be able to if I hadn't read Spanish books growing up. The stories are great and the drawings are very cute!
