Going through this book once more (for teaching this time) I found that this is a very good beginner level book for someone from a physics background. Medical imaging has been explained easily and the concepts on X-ray, Computed Tomography and MRI has been covered in a systematic way. What is even better is that the resources for teaching are available online for free by the author and publisher.
