Robert Johnson The author does not specify any ripening time on some of her recipes. Does anyone know the reason for this? In addition on page 31 Ripening Bacteria she calls for dilution of ripening bacteria in the brine but fails to point this out in her recipes. I have tried to contact author but to no avail. Out of 5 stars I give this book a 3.
