Yes, it's true. This is the REAL recipe for our favorite fictional family! We eat this all the time - now you can, too! Enjoy, and think of the Baxters when you serve this for dinner!
Size: 13x9 baking dish Temperature: 375 degrees
1. Boil 8 large chicken breasts until cooked. Cool and cut into cubes. Set aside. 2. In a large mixing bowl, mix together the following: - 2 cans Campbells Healthy Cream of Mushroom soup - 2 cans Campbell's Healthy Cream of Celery soup - 2 cans Campbell's Healthy Cream of Chicken soup - 1 16 oz can Enchilada sauce (mild) - 2 4 oz cans diced mild chiles 3. Add cubed chicken to the soup mixture, stir to mix completely. 4. Gently crush 1 bag of tortilla chips and set aside in a separate bowl 5. Grate 3-4 cups cheddar cheese and set aside in a separate bowl. (I use already grated cheese!) 6. Layer 2-3 times into the baking dish the following: - Soup/Chicken mixture - crushed tortilla chips (Just enough to cover, but not too thick) - Grated cheese (to taste - shouldn't be a solid layer) - NOTE: the cheese should make up the final layer 7. Bake dish in pre-heated oven for 40-50 minutes, or until edges are bubbly and cheese is melted over chips layer. 8. Serve with sour cream and salsa and remainder of chips and cheese.
