I think I'll read The Light Between Oceans by M.L. Stedman. It seems interesting, as it explores more than one couple's boon, going deeper to see the tragedy imposed on another by their decision.

Ethan of Athos by Lois McMaster Bujold - part of a scifi series but can be read as a standalone - very good - planet filled with only men who uses an artificial womb and women's harvested eggs to reproduce - a thriller.

All Your Perfects by Colleen HooverAlthough it's book #3 in a series, I found a couple of comments in the reviews and questions that say you can read it as a standalone.
Babycakes is book 4 in Armistead Maupin's "Tales of the City" series, but I think it can be read as a standalone. Infertility is a major part of the plot.
The Hallmarked Man by Robert Galbraith deals with infertility issues. It's the latest in the Cormoran Strike series.
I'm listening to The Glitch by Leeanne Slade right now, and a secondary character has fertility issues in the original timeline (it's a time-travel do-over book).
