I feel like every new pop fiction novel copies the same structure: a chapter with a character's name, told from their perspective; followed by a chapter named after another character and told from their perspective; and on and on and on.
Am I wrong?

Nothing under the sun is new. A lot of novels do this to avoid head-hopping. Personally, I love this set up for novels. It provides me more insight into the thoughts and day to day life of other characters.
