Recently Vanessa asked for us to share any recipe for a good southern vegetarian vegetable dish! In case that sort of got lost in the posts, I thought I'd just bring it up front for us to share any favorite healthy peaceful recipe ideas!

My good hubby John recently cooked parmesan crusted talapia fish. I guess you could use any fish. Its easy and its helathy.
4 tilapia fillets (however many you want to cook)
1/4 cup breadcrumbs / or Ritz crackers
1/4 cup grated parmesan cheese
1 tablespoon Italian seasoning
1 teaspoon garlic powder
3 tablespoons lemon juice
pepper / garlic powder / olive oil
1. Wash fish, pat on paper towel.
2. Combine crumbs, parmesan, italian seasoning, garlic powder on plate, mix well.
3. On different place pour 3 tbsp lemon juice
4. working 1 fillet at a time, place fillet on plate in lemon juice, pepper garlic powder.
5. Dredge fillet in parmesan mixture patting it all over to coat.
6. Place in olive oiled baking dish, repeat with remaining fillets.
7. Sprinkle more lemon juice over all, drizle lightly wiht olive oil.
8. Bake at 425 degrees for 20 minutes / or until easily flake with fork and edges are browning.
9. You can sprinkle more parmesan cheese on top if you like.

Diana Jenkins | 47 comments That sounds so delicious, Sharon, I'm going to print this and try it out this week. I have all the ingredients except the fish and the fresh parm.
Thanks for sharing it. I know you like to eat healthy, I'm afraid my favorite recipes are full of butter... ooops. I'll try to find a good one to share. Thanks to John too - I love hubbies that cook!
