SOLVED. Swedish or Norwegian & Arab author & story Forgetfulness Car Accident Cottage Noodles [s]

The year I read this book, 2016, not sure if that is when it was published, as I read the translated version (English). I borrowed from the library, I think it was still in the "new" section. It is translated from a Norwegian or Scandinavian language. The author is a young guy, half arab, half swedish or danish or norwegian, not sure! The basic plot is someone writing a story (or newspaper article) on some guy, by interviewing his friends and family about his life. A car crash, an elderly grandparent who passes away, a friend in Germany, arab immigrants, forgetfulness/dementia... cottage noodles...

Ah, I know, I cant remember the cover at all. I remember it was muted, not much to it.
It was not part of a series.
I think this was the authors 2nd book...
The cottage noodles was a meal the guy would eat, and it was made with just like ramen and cottage cheese.
I just remembered (!) his roommate was a big guy, like a bodyguard type, even though he ended up getting a job with a moving company (losing his other job previously) or something. They were really mismatched, one wouldn't think they would be friends.
I think it was literary fiction.
It alluded to suicide, but not really sure... he left that up to the reader.
