I'd be interested in hearing light novel recommendations for this subgenre too. The darker, the better.

Maybe you should check out Black Bullet? It's not quite Majou Shoujo, but it involves kids with superpowers in dangerous situations against demons I think?

If you want to just read something subversive, Grimgar is a great subversion of the video game world trope. Usually you have these protagonists with ungodly powers annihilating enemies, but in Grimgar you follow these people whisked away to a fantasy land with no training, no money, who are basically bums, forced into becoming adventurers who take down monsters. There's a lot of blood shed on both sides, no poofing into non existence.

Grimgar of Fantasy and Ash Volume 1 by Ao Jūmonji

My highest recommendation though for that dark fantasy story, and I can't believe I didn't think of it earlier, is Goblin Slayer volume 1. You should check that out. That's an easy V1 recommendation. I don't know if the rest of the series will live up to it though. It currently does not have an anime, so that's a good one to try reading as a standalone Light Novel (it has a manga companion too).
