I don't think I can pick just one, so here is a few favorites.
From the first trilogy my favorites are Vin, Sazed, and TenSoon.
From the Alloy of Law trilogy my favorites are Wayne, Steris, and Marasi so far. Wax is a great character, but I feel that without these others, the series wouldn't be nearly as good as it is. I really like the growth we have seen in Steris and Marasi throughout the three books so far.

everytime i read / reread mistborn series i miss his character

Vin from the first era, Wayne from the second (finally a character that appreciates a good hat)

Definitely Wayne from the second, but Steris has given him a run for his money in my books.

I was shocked how high Steris jumped up my favorite character list. She went from a boorish damsel in distress in Alloy, to a truly fun and enjoyable character (with a small spark of bad-assery) in Bands.

Can't forget to shout out to my brothers "Lord Ruler', ' Koloss' and 'Zane',

I am currently reading Shadows of Self, so hopefully there'll be more of him in the second series as it currently is :(.

Second era Mistborn - Wayne
Stormlight Archive - Kaladin ❤️

Overall, I think Sazed and Kelsier are my favorites. They just have such wonderful character arcs, especially Sazed. Going from faithful, to bitter, to basically god himself is such an interesting progression, and Sazed is such a chill and good person. Sanderson isn't quite done with Kelsier yet, and I'm excited to see where it goes. I think he's a great character because he can so easily be both a hero and a villain. I also love Marsh, once again because of his character arc- he's a better person than Kelsier, and he ends up being a symbol of death and evil while Kelsier is good and hope. Marsh's story is tragic, but he's doing his best and Branderson said he's happy to some degree so that's good.
From just era 1, I'd have to say Vin. She grows so much over the course of the series, and she's such a bamf.
Era 2, Wayne. He's wonderful. (I could go on but I won't)
All of cosmere though, or really any of Sanderson's books- Kaladin is my favorite character, hands down.
