Roasted Red Pepper Pate

2 cups fire-roasted sweet red peppers, drained well (open a jar, or roast your own)
1 medium potato, microwaved and peeled (about 1/2 cup)
2 tablespoons lemon juice
1" lemon zest
1 teaspoon adobo spice blend
2 tablespoons olive oil
salt, to taste

1. Place all ingredients in the glass of an immersion blender and whizz until smooth.
2. Taste for salt. Chill well.
This goes great on toast, canapes, baked potatoes or as a dip. If you want it spicy you could add a little hot sauce.

2 tablespoons dried garlic flakes or garlic powder
2 tablespoons sweet smoky paprika
1 tablespoon oregano
1 tablespoon thyme
1 teaspoon cumin 3 sundried tomatoes, chopped
1 teaspoon salt

What you need:
1 lemon, squeezed
2" lemon zest
1 (14 ounce) can artichoke hearts, drained and quartered
1 clove garlic
3 tablespoons olive oil
1/4 teaspoon sweet basil
pinch salt
What you do:
1. Before you squeeze the lemon, it's easier to peel off a thin strip of lemon zest about 2" long by 1" wide. Or if you have a zester, just use that.
2. Blitz all ingredients in a food chopper or processer until very smooth. Chill well.
I like it on breakfast toast, as a sandwich spread, or you could put it on canapes (that's crispbread, to you and me) to impress guests. It's even good on baked potato!

Cornish Cole Slaw
Actually a side but could be a starter, too.
Slice or shred:
red cabbage
red onion
red pepper
maybe some fresh fennel and grated carrot

Mix together: 1/4 cup of mayo
1/2 cup of buttermilk and some lime juice and salt and pepper. It's delicious
