For me, this has replaced The Joy of Cooking as the go-to cookbook for anything and everything. Whether I'm looking for instructions on how to handle an ingredient I'm not sure of, or trying to come up with a recipe to accommodate whatever I have on hand, this book virtually always sets me on the right path. I'm particularly fond of Mark Bittman's style of providing a basic recipe, and then listing simple instructions for variations, providing pairings of dishes, and suggesting good uses for leftovers.
