Why was Helen Minton not 'Helen Parmenger' since her late supposed father was the younger brother of Edward Parmenger? When did she become Helen Minton?

Mary Ellen This answer, like the question, is a SPOILER. Edward had an affair with Helen's (married) mother. She had the surname of her mother's husband, her supposed father, the man listed on her birth certificate. (It was not clear to me that she was aware that Edward was her biological father, actually; just as she did not know the identity of her son. No wonder she was a melancholic match for Jury!)
