South Pole Odyssey is a collection of Wilson's diaries. The Worst Journey In The World by Cherry-Garrard is the most comprehensive one I have read thus far, including quotes from many diaries. And I think Scott's Last Journey is mostly based on Scott's diaries. Amundsen wrote his own book as well.
