I think it was just that bees had gone extinct and now honey is very rare so it's used as money. Honestly, I thought it was a fairly silly form of currency. Yeah, honey is good, but there are other ways to sweeten things (Maple syrup, corn syrup, cane sugar- none of which require an insect pollinator) and I don't really think that people would turn to inconvenient jars of sticky sweetener as a main form of currency.
