Mary Catelli Thomas Frederick Crane's Italian Popular Tales is an 19th century collection of them.

Laura Gonzenbach's Beautiful Angiola: The Lost Sicilian Folk and Fairy Tales of Laura Gonzenbach is a selection of her Sicilian tales. She was one of the first to collect Italian tales.

I can't think of any other comprehensive collections of Italian folktales. Part of why Calvino published this collection was that there wasn't a good one.

But the two main Italian fairy tale that people talk/write about are Giambattista Basile and Giovan Francesco Straparola, so you can look for collections by or books about them.
