The hunters had learned this technique for smoking meat from the natives of that island, the Arawaks, who were now mostly gone. The natives called the structure a buccan; the French called it a boucan. The hunters who came to Hispaniola, who hunted and dried and sold the meat, took their name from this lash-up as well. They were the boucaniers.
