The key to successful baking is testing your oven temperature with an oven thermometer to make sure it’s calibrated properly.
In my years of teaching Italian cooking, I’ve noticed that what students appreciate the most are not “special occasion” recipes that take hours to prepare, but everyday recipes—the kind that you can easily replicate at home.
The recipes in this book are approachable, nonintimidating, and easy to prepare. Many take 30 minutes or under, and best of all, every recipe contains five or fewer main ingredients. All the ingredients are multipurpose, so there’s no need to worry about having leftover ingredients—you will be able to use them in other recipes.
